Ingredients:

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1 egg
  • 2 tbsp melted butter or vegetable oil
  • 1 tsp vanilla extract

Instructions:

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, combine milk, egg, melted butter, and vanilla extract.
  3. Mix the wet and dry ingredients just until blended.
  4. Heat a non-stick pan over medium heat and lightly grease it.
  5. Pour 1/4 cup of batter per pancake. Cook until bubbles form, flip, and cook another 1–2 minutes.
  6. Serve warm with maple syrup, berries, or butter.

2. Classic Jollof Rice 

A West African favorite! This spicy, savory, one-pot rice dish is perfect for family meals.

Ingredients:

  • 2 cups long grain parboiled rice
  • 4 fresh tomatoes
  • 1 red bell pepper
  • 1 scotch bonnet (optional)
  • 1 onion
  • 3 tbsp tomato paste
  • 2 cups chicken/beef stock
  • 1/2 tsp thyme
  • 1/2 tsp curry powder
  • Salt to taste
  • 1 tsp seasoning cube
  • 1/4 cup vegetable oil

Instructions:

  1. Blend tomatoes, bell pepper, scotch bonnet, and half the onion.
  2. Heat oil and sauté the remaining onion. Stir in tomato paste and cook for 2 minutes.
  3. Add the blended mix, cook until thick.
  4. Add curry, thyme, seasoning cube, and salt.
  5. Pour in the stock, bring to a boil, then add rinsed rice.
  6. Cover and cook on low heat for 25–30 minutes until rice is soft.
  7. Stir halfway and add water if needed.
  8. Serve hot with grilled chicken or fried plantains.

3. Chocolate Mug Cake

Ingredients:

  • 4 tbsp flour
  • 2 tbsp cocoa powder
  • 2 tbsp sugar
  • 1/4 tsp baking powder
  • Pinch of salt

  • 2 tbsp oil
  • 1/4 tsp vanilla extract
  • Optional: chocolate chips

Instructions:

  1. In a microwave-safe mug, mix all dry ingredients.
  2. Add milk, oil, vanilla and stir until smooth.
  3. Add a few chocolate chips if desired.
  4. Microwave for 1 minute. Let cool slightly.
  5. Enjoy directly from the mug!
