Instructions:
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, combine milk, egg, melted butter, and vanilla extract.
- Mix the wet and dry ingredients just until blended.
- Heat a non-stick pan over medium heat and lightly grease it.
- Pour 1/4 cup of batter per pancake. Cook until bubbles form, flip, and cook another 1–2 minutes.
- Serve warm with maple syrup, berries, or butter.
2. Classic Jollof Rice
A West African favorite! This spicy, savory, one-pot rice dish is perfect for family meals.
Ingredients:
- 2 cups long grain parboiled rice
- 4 fresh tomatoes
- 1 red bell pepper
- 1 scotch bonnet (optional)
- 1 onion
- 3 tbsp tomato paste
- 2 cups chicken/beef stock
- 1/2 tsp thyme
- 1/2 tsp curry powder
- Salt to taste
- 1 tsp seasoning cube
- 1/4 cup vegetable oil
Instructions:
- Blend tomatoes, bell pepper, scotch bonnet, and half the onion.
- Heat oil and sauté the remaining onion. Stir in tomato paste and cook for 2 minutes.
- Add the blended mix, cook until thick.
- Add curry, thyme, seasoning cube, and salt.
- Pour in the stock, bring to a boil, then add rinsed rice.
- Cover and cook on low heat for 25–30 minutes until rice is soft.
- Stir halfway and add water if needed.
- Serve hot with grilled chicken or fried plantains.
3. Chocolate Mug Cake

Ingredients:
- 4 tbsp flour
- 2 tbsp cocoa powder
- 2 tbsp sugar

- Optional: chocolate chips
Instructions:
- In a microwave-safe mug, mix all dry ingredients.
